Cena maridaje Cristina Forner

Maridaje: Rioja – “Antea” 2023 — Viuras viejas y Tempranillo blanco.

Maridaje: Rioja – “La Halconera” 2021 — Maturana Tinta.

Singular Wine Pairing Dinner with Cristina Forner

Next Thursday, October 30.

Marqués de Cáceres has deep Franco-Spanish roots. The Forner family, forced into exile during the Spanish Civil War, took refuge in France, where Enrique Forner grew up among the vineyards of Bordeaux, absorbing a winemaking sensibility marked by elegance, freshness, and respect for terroir.

The winery began its journey in 1970, born from Enrique’s dream, inspired by his Bordeaux experience. Since then, it has made a decisive mark on Rioja, committing to vineyard excellence, precision in winemaking, and a timeless elegance. Today, under the direction of Cristina Forner, the estate has expanded into the Ribera del Duero DO, while maintaining its pioneering spirit, projecting its wines globally without sacrificing authenticity.

Cristina was born in Saint-Aignan-sur-Cher, in the Loire region, experiencing from childhood this duality of cultures: the Spanish tradition of her ancestors, and her French formation among châteaux, business studies in Bordeaux, and cosmopolitan environments. This dual heritage has allowed her to create wines that combine the best of both worlds: a passion for Rioja and Ribera, and the precision of Bordeaux-style winemaking.

The wines presented suring rhe dinner are not part of the classic Marqués de Cáceres range. They are superior wines, the result of rigorous grape selection, unique varieties, and innovative processes. They represent the group’s most ambitious side: wines that combine freshness, complexity, and personality, revealing in every glass the winery’s capacity to reinvent itself without losing its essence.

THE DINNER

First Starter: Cauliflower with Truffle, Walnut, and Brioche

A composition playing with delicate contrasts: the creamy softness of cauliflower, the earthy depth of truffle, the subtle crunch of walnut, and the golden crumb of brioche.
Pairing: Ribera del Duero – La Capilla “Ánfora Rosé” 2023 — Tempranillo.
A pure Tempranillo rosé from Ribera del Duero is unusual. Finca La Capilla crafts it from meticulously selected grapes from their own vineyards, fermented in ancestral amphorae, with a brief 4-month aging in large French barrels, giving body without overpowering woodiness. This wine perfectly complements the cauliflower: its rosé freshness, fruity notes, and subtle bitter finish intertwine with the textures of the dish, opening the palate for what follows.

Second Starter: Scallop with Avruga, Watercress, and Citrus Caviar

The sea is present through the saline flavors of avruga caviar, while watercress adds vibrant green, and citrus brings freshness and acidity. The scallop rests in this ensemble like a pearl surrounded by marine foam.
Pairing: Rioja – “Antea” 2023 — Old Viura vines and White Tempranillo.
White Tempranillo is a recent natural mutation of red Tempranillo, discovered in Rioja vineyards in the late 1980s and officially approved in 2007.
In “Antea,” Marqués de Cáceres combines this grape with old Viura, fermenting in barrels, maintaining finesse on lees and underlying structure. This wine enhances the scallop: the salinity is accentuated without being aggressive; the citrus acidity of the dish dialogues with the wine’s balanced acidity; the complexity of the wood softens and rounds the flavors.

First Main Course: Lobster with Dashi, Red Fruits, and Beetroot

A bold combination where seafood dresses in forest and earth: the noble, tender lobster contrasts with the umami of the dashi, while red fruits and beetroot bring sweet, fermented, earthy, vibrant notes. A dish that defies expectations, requiring a red wine with strength and personality, without sacrificing elegance.
Pairing: Rioja – “La Halconera” 2021 — Maturana Tinta.
Maturana Tinta is a recovered, rare Rioja variety, with high acidity and rich color. It has character, firm tannins, and aromas of ripe black fruit, toasted notes, and balsamic touches.
“La Halconera” represents the most modern and daring expression: hand-harvested from selected plots, delicately crafted, aged to express both fruit and structure without aggression.
This red-wine-and-seafood pairing—lobster—is daring, beautiful, and exacting. The wine’s richness harmonizes with the dashi, the earthiness of beetroot, and the red fruits, creating a symbiosis: sea and forest, intensity and freshness.

Second Main Course: White Veal with Wild Mushrooms, Pine Nuts, and Parsley

A dish of forest aromas, damp earth, wood, and shadow. The veal provides tenderness; mushrooms and pine nuts contribute rusticity; parsley offers a fresh green breath. Perfume of forest after rain, taste of autumn that invites the accompanying wine.
Pairing: Rioja – “Generación MC” 2021 — Tempranillo.
This Tempranillo is carefully matured, respectfully aged, showcasing the variety at its best: ripe fruit, body, polished tannins, elegance.
The wine embraces the meat, supports the depth of mushrooms and earthy tones, complements pine nuts with toasted notes, leaving the palate lingering with persistence.

Dessert: Vanilla with Milk, Rice, and Caramel

A sweet finale, a soft embrace. Vanilla and a veil of milk extend creamy notes; rice adds texture; caramel envelops, comforts, and sweetens without excess.
Pairing: “Satinela” 2024 – Marqués de Cáceres.
A semi-sweet white wine with fresh, aromatic profile, floral and fruity notes that complement the dessert without overpowering it. Its balanced sweetness caresses the creaminess of vanilla and enhances the subtlety of the caramel, achieving a rounded, luminous, and elegant finish.
